Diabetic Bars

1 cup dates
1/2 cup prunes
1 cup water
1 stick margarine
2 eggs
1 teaspoon soda
1 teaspoon vanilla extract
1/4 teaspoon salt
1 cup flour
1/2 cup chopped nuts

Cream margarine, vanilla and egg together. Sift all of the dry ingredients together in another bowl. Add water, dry ingredients, dates, prunes and nuts to creamed mixture. Spread in a cookie sheet pan. Bake at 325 degrees to 350 degrees F for 15 – 20 min. or until lightly browned.

Sugar-Free Spice Cookies

2 cup water
1 cup raisins
2 sticks margarine
1 cup prunes (chopped)
1 cup dates (chopped)
2 egg whites
2 teaspoon soda
1/2 teaspoon salt
2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Dash of ground cloves
2 1/3 cup flour, and maybe 1/4 cup additional
1/2 to 1 cup of nuts

Cream margarine, vanilla, egg whites together. Sift all of the dry ingredients together in another bowl. Add water, dry ingredients, raisins, dates, prunes and nuts to creamed mixture. Drop onto cookie sheet. Bake at 325 – 350 degrees F for 7 to 10 min. or until a lightly golden brown.

Diabetic Spice Oatmeal Cookies

1 cup water
2 cup raisins
4 tablespoons sweetner
½ cup butter
½ tsp salt
¼ tsp ground allspice
½ tsp ground cinnamon
1 tsp soda
1/8 tsp ground nutmeg
2 1/2 cups oatmeal
½ cup chopped nuts

Boil water and raisins. Cool for 5 minutes. Add all the other ingredients. Form into balls and bake on lightly greased cookie sheet for 15 minutes in a 325 degree oven.

Diabetic Fruit Bars

1 cup dates (finely chopped)
1/2 cup dried apricots (finely chopped)
1/2 cup walnuts
1 1/2 teaspoon baking powder
1/2 cup butter
1 1/3 cup rolled oats
1/4 cup oil
2 eggs
1 teaspoon vanilla extract
1 cup flour
1 teaspoon ground cinnamon

In a saucepan, melt together the butter and oil, then add apricots and dates. Beat in the egg and vanilla extract after removing from heat. Combine the oats, baking powder, flour and cinnamon, then add to rest of mixture. Bake in 9 x 13 inch pan for 20 minutes at 350 degrees.

Sugar Free Spice Cookies

1/3 cup margarine (at room temp, softened)
1/4 cup granulated fructose or equivalent
1/2 teaspoon granulated brown sugar replacement
1 cup flour
1/2 teaspoon baking powder
1 teaspoon ground cinnamon
1/8 teaspoon salt
1 teaspoon vanilla extract

In large mixing bowl, cream together the margarine, granulated fructose and the sugar equivalent together until a fluffy consistency. Add in the flour, cinnamon, baking powder and salt. Mix well. Stir in the vanilla extract. Shape the dough by hand into 1″ balls. Place on an ungreased baking sheet. Flatten each dough ball with a water dipped fork. Bake on 375 degrees F for 8 to 10 minutes. Allow to cool complete on a wire rack.

Diabetic Nut Cookies

1/2 cup flour
1/4 teaspoon baking powder
1/8 teaspoon salt
1/2 teaspoon Sweet & Low or equivalent sweetener
2 tablespoons orange juice
1/2 teaspoon vanilla extract
2 tablespoons shortening
2 tablespoons nuts (chopped)
2 tablespoons orange zest

Combine all ingredients, then drop by spoonfuls onto baking sheets. Bake at 350 degrees F for about 10 – 15 minutes or until lightly golden browned.

Diabetic Chocolate Chip Cookies

1/4 cup softened margarine
1 1/2 teaspoon vanilla extract
1 cup + 2 tablespoon flour
2 teaspoons baking powder
1/2 cup chocolate chips
1/4 cup nuts (chopped)
4 teaspoons of your favorite liquid sweetener
1 egg
1/2 teaspoon salt
1/4 teaspoon soda

Combine margarine, vanilla, flour, salt, baking soda and baking powder in small mixing bowl. Beat with mixer on a high speed for 1-2 minutes, until fluffy and light. Add sweetener and egg and 1/2 cup of water. Blend on a low speed until well mixed. Add in the nuts and chocolate chips. The dough will be quite soft. Drop dough by spoonfuls onto ungreased baking or sheets. Bake at 425 degrees F for 10 – 12 minutes

Applesauce Cookies

1/2 cup flour
1 teaspoon ground cinnamon
1/2 teaspoon soda
1/4 teaspoon ground allspice
1/2 cup quick rolled oats
1/2 cup raisins
1/2 cup applesauce (unsweetened)
1 egg, beaten
1/4 cup shortening
2 teaspoon vanilla extract
1/4 teaspoon orange flavoring (optional)

Mix together the wet ingredients first, then add all dry ingredients. Drop mixture onto greased cookie sheets. Bake at 350 degrees F for 8 – 10 minutes. Makes about 1-2 dozen depending on how large you make them.
