Frosted Banana Oaties

1 cup sugar
1 cup mashed very ripe bananas
3/4 cup butter or margarine (softened)
1 egg
2 1/2 cups quick-cooking or old-fashioned oats
1 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
Vanilla Frosting (recipe below)

Vanilla Frosting Ingredients:

3 cups powdered sugar
1/3 cup butter or margarine (softened)
1 1/2 teaspoons vanilla extract
2-3 tablespoons milk

Heat oven to 350º. Grease cookie sheet. Beat sugar, bananas, butter and egg in large bowl with electric mixer on medium speed, or mix with spoon. Stir in remaining ingredients except Vanilla Frosting. Drop dough by rounded tablespoonfuls about 2 inches apart onto cookie sheet. Bake 10 to 12 minutes or until edges are golden brown and almost no indentation remains when touched in center. Cool 1 to 2 minutes; remove from cookie sheet to wire rack. Cool completely. Frost with Vanilla Frosting.

Vanilla Frosting Directions:

Mix all ingredients until smooth and spreadable.

Double Oat Cookies

1 cup butter or margarine — softened
1 cup packed brown sugar
1 teaspoon vanilla extract
1 egg white
1 1/4 cups all-purpose flour
1 cup quick-cooking or old-fashioned oats
1 cup oat bran
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon baking powder

Heat oven to 350º. Beat butter, brown sugar, vanilla and egg white in large bowl with electric mixer on medium speed, or mix with spoon. Stir in remaining ingredients. Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet. Bake 10 to 12 minutes or until golden brown. Cool 1 to 2 minutes; remove from cookie sheet to wire rack.

Chocolate Oatmeal Chewies

1 1/2 c. sugar
1 c. butter or margarine (room temperature)
1/4 c. milk
1 egg
2 2/3 c. old fashioned or quick cooking oats
1 c. all-purpose flour
1/2 baking cocoa
1/2 tsp. salt
1/2 tsp. baking soda

Preheat oven to 350 degrees. Combine first four ingredients in large bowl and mix on medium speed or stir by hand with spoon. Add remaining ingredients. From dough into rounded tablespoons and place 2 inches apart on ungreased baking sheet. Bake approximately 11 minutes or until firm. Cool for 2 minutes and remove to wire rack.

Butterscotch Oatmeal Crinkles

2 c. firmly packed brown sugar
1/2 c. butter (room temperature)
1/2 c. shortening
1 tsp. vanilla flavoring
2 eggs
2 1/4 c. flour
2 c. old fashioned or quick cooking oats
1 1/2 tsp. baking powder
1/2 t. salt
1/2 cup granulated or confectioners sugar.

Preheat oven to 350 degrees. Grease baking sheet. Mix together the first five ingredients in a large bowl on low to medium speed or mix by hand with spoon. Add flour, oats, baking powder and salt. Form dough into 1 inch balls and roll in sugar. Place approximately 2 inches apart on prepared sheet. Bake 11 minutes or so until cookie remains firm when touched lightly in center. Remove from sheet immediately and cool on wire rack.

No Bake Coconut Oatmeal Cookies

6 tbsp Cocoa powder
1 cup Flaked coconut
3 cup Oats (quick cooking)
1 stick Margarine
1/2 cup Milk
2 cup Sugar
1 tsp Vanilla extract

Mix cocoa powder, coconut and oats in large bowl, set aside. In saucepan, bring margarine, milk and sugar to boil, allowing to boil for 2 minutes, then add vanilla extract. Pour mixture over oatmeal mixture, mixing well. Drop by teaspoonfuls onto waxed paper and allow to set until firm.

No Bake Peanut Butter Oatmeal Cookies Recipe

2 cups Sugar
3 cups Oats
1/3 cup Margarine
1/4 cup Cocoa
1/4 cup Dry Milk
1/2 cup Peanut Butter
1/2 cup Water
1 Tbsp Vanilla extract

Mix sugar, oats, margarine and cocoa in a saucepan. Heat until boiling, stirring frequently. Remove pan from heat and add peanut butter, stirring until smooth. Add oats, cocoa and vanilla extract, mixing thoroughly. Drop by tablespoon onto waxed paper and let cool.

Oatmeal Applesauce Diabetic Cookies

1/2 cup flour
1 1/2 teaspoon ground cinnamon
1/2 teaspoon soda
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1 teaspoon ground allspice
1/2 cup oatmeal
1/2 cup raisins
1/2 cup unsweetened applesauce
1/4 cup cooking oil
1 egg
1 teaspoon vanilla extract

Mix the flour, baking soda, cinnamon, salt, ground nutmeg, ground allspice, oatmeal and the raisins. Add in the applesauce, oil, egg and vanilla extract. Mix to moisten and drop onto greased cookie sheet. Bake 12 minutes at 375 degrees F.
