Chocolate Chip Thumbprint Cookies
 
1 cup Semi-Sweet Chocolate Chips, divided
1/4 cup Butter (softened)
1/4 cup Shortening
1/2 cup Sugar
1 Egg (separated)
1/2 tsp Vanilla extract
1 cup Flour
1/4 tsp Salt
1 cup Finely chopped nuts
 
Heat oven to 350 degrees F. Melt chocolate chips over double boiler or in microwave for 20 to 30 seconds. In mixing bowl, combine butter, shortening, sugar, melted chocolate, egg yolk and vanilla, blend well. Stir in the flour and salt. Roll dough into 1 inch balls. Beat egg white with fork slightly. Dip each ball into egg white mixture and then roll in chopped nuts. Place balls on ungreased baking sheet, about 1 inch apart. Press center of each ball with thumb to make an indentation. Bake 10 to 12 minutes. Remove from oven and immediately place several of remaining 3/4 cup of chocolate chips into center of each cookie. Remove cookies from baking sheets to wire racks. After a few minutes, swirl melted chocolate into each thumbprint. Allow to cool completely on wire racks.
