Christmas Spice Cookies
3/4 Cup White sugar
2/3 Cup Butter (softened)
1/4 Cup Orange juice (not concentrated)
1/2 Cup Corn syrup (dark)
1/2 Cup Molasses
4 1/2 Cups White flour
3/4 Cup Whole wheat flour
1 tsp Baking soda
1 tsp Salt
2 tsp Ground ginger
1/2 tsp Ground nutmeg
1/2 tsp Ground allspice
1/2 tsp Ground cloves
In mixing bowl, cream together the sugar and butter. Blend in the orange juice, dark corn syrup and
the molasses. Combine flours, ginger, baking soda, salt and ground cloves, ground nutmeg and ground allspice.
Add to the creamed mixture, mixing well. Chill for several hours, or overnight. Divide dough into several
portions. Roll a section of dough on floured surface or cutting board to 1/4" thickness. Cut with
cookie cutters into desired shapes. Place 2" apart onto greased cookie sheets. Bake at 350 degrees
F for 12 to 14 minutes. Cookies will be chewy and soft if baked for less time, bake longer for a crunchier
cookie. Makes 6-7 dozen cookies.
