Cranberry Oatmeal Cookies
1 cup Flour
1 tsp Baking powder
1/2 tsp Cinnamon
1/4 tsp Nutmeg
1/2 cup Butter
3/4 cup Brown sugar
1 Egg
1/4 cup Milk
1 tsp Orange zest
1 1/2 cups Oatmeal
3/4 cups Cranberries (chopped)
1/4 cups Chopped Walnuts
Icing:
1 cup Powdered sugar
1/2 tsp Orange zest
1/4 tsp Vanilla extract
Up to 2 tablespoons of Orange juice
Stir together dry ingredients, including the flour, baking powder, cinnamon, and nutmeg. In large mixing bowl, beat butter until softened. Add
in the brown sugar, beating until fluffy. Add in the egg, milk and orange zest, mixing well. Add in the flour mixture, beating until well
combined. Stir in the oats, cranberries and chopped nuts. Drop dough by rounded tablespoonfuls onto greased cookie sheets. Bake at 375 degrees F
for about 10 to 12 minutes or until lightly golden browned. Remove cookies from cookies sheets and allow to cool. Dip the tops of cookies into
the orange icing to coat.
To make icing:
Stir together powdered sugar, orange zest, vanilla extract and enough orange juice to make icing of a pouring consistency.
