Double Chocolate Mint Chip Cookies 1 1/2 cup Mint chocolate chips 3/4 tsp Baking soda 1/2 cup Butter (softened) 1/4 cup Sugar 1 Egg 1 1/4 cup Flour 1/2 tsp Salt 1/2 cup Brown sugar (firmly packed) 1/2 tsp Vanilla extract 1/2 cup Nuts (chopped) Preheat oven to 375 F. Melt 3/4 cup of mint chocolate chips in double boiler or in microwave for 20-30 seconds, stir chips until smooth. Cool chocolate and set aside. In another bowl, combine flour, baking soda and salt and set aside. In another large bowl, combine butter, brown sugar, sugar and vanilla, beat until creamy. Stir in melted chocolate chips and egg. Beat mixture well. Slowly stir in the flour mixture. Stir in remaining 3/4 cup of chococolate chips and the nuts. Drop dough by rounded tablespoonfuls onto ungreased baking sheets. Bake at 375 F for about 8 to 10 minutes. Allow cookies to cool 2 to 3 minutes on baking sheets before removing. Cool cookies on wire racks.
