Lemon Blossom Cookies
2 cups Butter
1 1/2 cups Powdered sugar
1/4 cup Lemon juice (fresh squeezed)
4 cups Flour
Finely chopped nuts
Fruit preserves
Nut halves
Cream together butter and sugar. Add lemon juice and beat well.
A little at a time, add the flour, mixing well. Allow to chill for
about two or three hours. Preheat the oven to 350 degrees F. Shape
the dough into 1 1/4" balls. Roll balls in nuts. Place balls one
inch apart onto greased cookie sheets. Press thumb into the center
of each dough ball and fill with preserves or nut halves. Bake for
about 15 minutes, or until lightly golden brown.
