Meringue Chocolate Chip Cookies
 
2 Egg whites
1/8 tsp Cream of tarter
1/8 tsp Salt
1 tsp Vanilla
3/4 cup Superfine sugar
1/2 cup Chocolate chips
1/4 cup Nuts (optional)
 
Preheat oven to 300 degrees. Beat together the egg whites, cream of tarter and salt until soft peaks form. Add in vanilla, then add sugar gradually, beating until stiff. Fold in chocolate chips and nuts. Drop dough by teaspoonfuls about 2 inches apart on brown paper or parchment paper spread onto cookie sheets. Bake until dry, approximately 20-25 minutes. Let cool for 1-2 minutes before removing from cookie sheet. Set on wire racks to cool completely.
