Peanut Pecan Chocolate Chip Cookies 1/4 pound Butter 1/4 cup Vegetable shortening 2 tbsp Peanut butter 1/2 cup Sugar 1/2 cup Brown sugar (firmly packed) 1 Egg 1 tsp Vanilla extract 1 3/4 cup Flour (sifted) 1/2 tsp Baking soda 1/2 cup Pecans (chopped) 1 package Semi-sweet chocolate chips Preheat oven to 375 degrees F. Mix butter, shortening and peanut butter until and fluffy. Stir in both sugars, egg, and the vanilla. Stir in dry ingredients. Fold in pecans and chocolate chips. Drop by teaspoonfuls onto ungreased baking sheets about 2 inches apart. Bake for 8 to 10 minutes or until edges are light golden brown. Cool a few minutes on cookie sheets before removing to wire racks to cool completely.
