Auntie’s Christmas Cookies

2 cups White sugar
1 cup Butter (softened)
2 Eggs
1 tsp Vanilla extract
5 cups Flour
1 tsp Baking soda
1 cup Sour cream

Frosting Ingredients:

1 tablespoon Instant coffee (granules)
1 tablespoon Water (Hot)
6 tablespoons Softened butter
1 tsp Vanilla extract
3 cups Powdered sugar (sifted)
1/3 cup Whipping cream

Beat white sugar and butter in large mixing bowl until fluffy and light. Add in the eggs and vanilla extract. Combine flour & baking soda in a separate bowl and add alternately with the sour cream. Mixing well. Refrigerate several hours, or overnight. When ready, divide the dough into four pieces. Roll out one piece of dough on a lightly floured cutting board or surface. Roll to 1/8 inch thickness (keep remaining dough chilling in fridge). Cut with cookie cutters into your desired shapes. Place onto ungreased baking sheets. Bake at 375 degrees F for 10 to 12 minutes or til the bottoms are a golden brownish color. Cool completely before frosting with the Coffee Frosting.

To make coffee frosting, combine all ingredients, mixing until a smooth consistency.
