It’s that time of year again! The holidays are upon us, and that means it’s time to start baking. These ginger yuletide cookies are the perfect addition to your holiday cookie platter. They’re deliciously spiced with ginger, cinnamon, and nutmeg, and they’re sure to delight your family and friends. So put on your apron and get ready to bake up a batch of these festive cookies!
3/4 cups Firmly packed brown sugar
1/2 cups Light corn syrup
1/2 cup Softened butter
2 Egg whites (beaten gently)
3 cups Oat Bran Hot Cereal (dry and uncooked)
3/4 cups White flour
2 teaspoons Ground ginger
1 teaspoons Ground cinnamon
1 teaspoons Baking soda
1/4 cups Decorating sugar (Red and Green)
Pre-heat oven to 350 degrees. Beat butter, brown sugar, corn syrup in bowl until light and fluffy. Add in the egg whites. In separate bowl, combine oat bran, flour, ground ginger, baking soda and cinnamon. Add to butter mixture. Shape dough into 1 inch balls, rolling each ball in red or green decorating sugar to coat all the way around. Place balls 2 inches apart on an ungreased cookie or baking sheet. Press the balls firmly into 2 inch circles. Bake for 11 to 13 minutes, til lightly golden browned. Cool for 2 minutes on baking sheet before removing to cool completely on wire racks. Makes approx. 3 1/2 dozen.
