Mint Chocolate Christmas Cookies

It’s that time of year again! Time to break out the Christmas cookie recipes and get baking. These Mint Chocolate Christmas Cookies are the perfect addition to your holiday cookie tray. They are festive, delicious, and easy to make. So grab your apron and your favorite Christmas cookie cutter and let’s get started!

1/2 C Unsalted butter
1 C Sugar
1 lge Beaten Egg
1/2 tsp Vanilla
1/2 tsp Peppermint extract
1/2 C Flour
1/4 teasp. Salt
1/2 teasp. Baking powder
2 ounce Unsweetened chocolate
2 teasp. Water
Non-nonpareils

Beat unsalted butter til soft. Gradually add in the granulated sugar, blending til creamy. Beat in the egg, vanilla and peppermint extract. Add the baking powder and salt to the flour. Stir flour mixture into the sugar and butter mixture. Melt unsweetened chocolate over double-boiler before adding to the dough. Form dough into a roll approx. 2 to 3 inches wide. Wrap the dough tightly in plastic wrap, put in refrigerator and allow to chill several hours. Slice dough into 1/4 inch thick slices. Place slices onto a pre-greased baking sheet. Sprinkle slices with non-nonpareils, pressing them into dough gently using the back of a spoon. Bake at 400 degrees F for 8 to 11 minutes. Cool the cookies on wire racks.
