1 cups Softened butter
1 cups White sugar
1 1/2 teaspoons Vanilla extract
2 Eggs
3 cups Flour
1/2 teaspoons Baking soda
1 teaspoons Salt
1/2 cups Chopped pecans
In a mixing bowl, mix together butter, sugar, eggs and vanilla extract. Stir in flour, baking soda, salt and the chopped pecans. Divide dough into three equal portions. Shape each portion in to a log or roll. Wrap logs in wax paper or plastic wrap and chill for several hours or overnight. Pre-heat oven to 400 degrees F. Slice logs in to 1/8″ slices. Place slices 1″ apart onto un-greased cookie sheets. Bake for 7 – 9 minutes or til a light golden brown.
To make cinnamon slices, use 1/2 cup white sugar and 1/2 cup firmly packed brown sugar for 1 cup of sugar and substitute a tablespoon of ground cinnamon for vanilla extract, omitting the pecans.
