1/3 cup margarine (at room temp, softened)
1/4 cup granulated fructose or equivalent
1/2 teaspoon granulated brown sugar replacement
1 cup flour
1/2 teaspoon baking powder
1 teaspoon ground cinnamon
1/8 teaspoon salt
1 teaspoon vanilla extract
In large mixing bowl, cream together the margarine, granulated fructose and the sugar equivalent together until a fluffy consistency. Add in the flour, cinnamon, baking powder and salt. Mix well. Stir in the vanilla extract. Shape the dough by hand into 1″ balls. Place on an ungreased baking sheet. Flatten each dough ball with a water dipped fork. Bake on 375 degrees F for 8 to 10 minutes. Allow to cool complete on a wire rack.
