1 cup packed brown sugar
1 cup butter or margarine (softened)
1 teaspoon vanilla extract
1 egg
3 cups all-purpose flour
1 1/2 teaspoons ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup chopped nuts
Beat brown sugar, butter, vanilla and egg in large bowl with electric mixer on medium speed, or mix with spoon. Stir in flour, cinnamon, baking soda and salt. Stir in nuts. Shape dough into rectangle, 10 x 3 inches. Wrap and refrigerate about 2 hours or until firm. Heat oven to 375º. Cut rectangle into 1/8″ slices. Place 2″ apart on ungreased cookie sheet. Bake 6 – 8 minutes or until light brown. Cool slightly; remove from cookie sheet to wire rack.
